Preparation of the rose butter sauce: melt the butter in a saucepan on a very gentle flame. As soon as the butter has melted, add the rosebuds and leave to rest.
Clean the prawns, taking care to eliminate their intestines. Then cut them into small pieces until you get a rather fine and uniform compote and place them in a bowl.
Season the shrimps with a pinch of salt, some grated pepper and a drizzle of extra-virgin olive oil Armonie. Mix it well.
To make the “roses” take the fresh pasta and pull it well with the pasta maker, until you obtain a very thin sheet of pasta. Place it on a cutting board.
Then place the shrimp mixture along the length of the pasta sheet and roll the pasta sheet on itself. Try to eliminate the air from the pasta, press it with the fingers to make the shrimp mixture adhere well to the pasta.
With the help of a cutter wheel, cut off the surplus of the dough. And form a sort of rose turning the pasta with the compote on itself.
The roll must be sealed very well. Let it rest a bit.
To prepare the culis (purée) of basil: Take some basil leaves. Add them to a blender and drizzle some extra-virgin olive oil Armonie until you obtain a smooth sauce. Pour the basil sauce into a container, taking care to filter it through a strainer to remove the fiber. Then add a pinch of thickener, a pinch of salt. Beat the mixture with a whisk to obtain the basil culis.
Bring to boil some water. Then put the rose of pasta and prawns that you had set aside very gently in the water and slowly stir the water around it and let the pasta scald. Please be careful that the prawn mixture must be just blanched.
Dish preparation: take the tomato pâté Guido1860 and with the help of a brush, distribute it on the bottom of the plate. Then place the pasta and shrimp rose in the center of the plate and garnish it with the rosebuds. Complete the decoration with the basil culis.
Now take the melted rose butter and season the plate with it. Beside add some shrimp tartare.
Top up with some grated pepper and serve it to your soulmate!
